Making Fruit Wine

Most people that that grapes are the only way to make wine, but they are missing out on a whole world of flavors! You can even make wine from spices and flowers, for instance dandelions or hibiscus or star anise. If you are not so keen with working with fresh fruit or the fruit you want to use is out of season, you can use canned fruit or fruit juices.

Most fruits and spices have little fermentable sugar of their own, so you need to add white sugar or honey to bring them up the right specific gravity. They may also need to pectin, acid blend, and yeast nutrient in order to use wine yeast. Many of the available recipes are for 1 gallon batches, so you can experiment without worrying about too much effort or money invested in a batch. This is also adventagious for the less experienced vintner.
